Superfood Guacamole + Superfood Cashew Queso
It’s Cinco de Mayo, let’s celebrate! This holiday has a special place in my heart for two reasons. One, because it’s my daughter’s birthday, and two, because I absolutely LOVE Mexican food! So today I’m taking my two favorite dips and elevating them to add power-packed nutrition with fabulous taste.
As head of R&D for Blendtopia, my job quite literally is to play with food and ‘amp it up’ with superfood goodness. So, why wouldn’t I do that today?! Enter, Superfood Guacamole and Superfood Cashew Queso.
Superfood Guacamole

Oh how I love avocados and the base is already a superfood so a total win win. High in phytonutrients, healthy fats, fiber, magnesium, potassium, omega fatty acids, vitamins C, E, K, and B6, avocados are incredible!
SUPERFOOD GUACAMOLE
Ingredients
- 4 large avocados, cubed
- 1/2 cup red onion, chopped finely
- 1/3 cup raw hemp seeds (hemp hearts)
- 2 fresh limes, juiced
- 1/4 cup cilantro, chopped finely
- 1/2 jalapeño, finely chopped + seeds removed
- 2 tsp sea salt
Instructions

Cube all 4 avocados into a medium bowl; Mash really well with a fork.

Add all other ingredients; mix to taste.

Add any additional salt or lime juice to taste.

Garnish with a sprig of cilantro + sprinkling of hemp seeds. Serve with tortilla chips or plantain chips (my fav)!
Superfood Cashew Queso

If you’re vegan, you’re very familiar with using nuts as a base for a cheese replacement. Soaked nuts play a starring role in so many dishes and today we’ll be using cashews. This dip is really fun to elevate because I’m quite literally re-writing the way it’s made to turn it into a true superfood.

The cheesy essence is still intact (thank you nutritional yeast), but… it’s vegan, it’s packed with high density nutrition, it’s loaded with protein, healthy fats, magnesium, iron, and it’s bursting with antioxidants.
If you’re not familiar with nutritional yeast, it’s a deactivated yeast that contains B-complex vitamins and provides a “cheesy” flavor to vegan dishes.
Superfood Cashew Queso
Equipment

High speed blender or food processor.
Ingredients
- 4 cups raw cashews, soaked for up to 4 hrs + drained
- 1 cup water
- 1/2 cup nutritional yeast
- 2 14oz cans diced tomatoes with green chiles
- 2 fresh limes, juiced
- 1 1/2 tsp sea salt
- 2 tsp goji berry powder
- 1/2 tsp turmeric powder
- 1/4 tsp black pepper
Instructions

Soak raw cashews for up to 4 hours, drain.

In a high speed blender or food processor, combine all ingredients minus the tomatoes and chiles. Do add the liquid from the cans, just reserve the diced tomatoes and chiles for a later step.

Blend until a smooth and creamy "cheese" sauce is created, adding more water if needed for blending.

Transfer the cheese mixture to a large bowl, then stir in the cans of diced tomatoes and green chiles.

Add any additional seasoning to taste, then warm the dip using a small crock pot or by heating it gently over a stove top. Serve with baked tortilla chips, fresh veggies or my favorite, plantain chips. Enjoy!
